Crunchy Superfood Granola Bars

Crunchy Superfood Granola Bar


Do you crave something crunchy with naturally sweetened? Or do you want quick breakfast to go? I prefer non-sticky and less sweet granola bars like this. Making your own granola bars is easy and fun! It is good for your health and cost-effective.




I used organic quick oats for this recipe. Quick oats are heat-treated, so that they can be eaten as they are and easy to absorb water or any ingredients well. Rolled oats are steamed, flattened and dried, which is basically referred to as quick oats. You can check ingredients on the product. 


I usually use virgin coconut oil, which is unrefined and unheated. 


For honey, my choice is raw and unfiltered. This time my honey is buckwheat honey. 


Cacao nibs are a superfood, which is the ingredient for chocolate or cocoa, and have a taste like bitter chocolate. Cacao nibs are very nutritious and trending for health conscious individuals. Cacao nibs are high in antioxidants. Antioxidants can help reduce cell damage and prevent from getting diseases. You can eat them without cooking. If you put in a smoothie, it becomes a smoothie with a little bit of chocolate flavor and is delicious.

For seeds and nuts, I used the organic salad mix I bought at Costco. This is something I eat on a salad and I sometimes pinch it as a snack. The organic salad mix contains sunflower seeds, dried cranberries and pumpkin seeds. The seeds are roasted and a little bit salty. If you use other nut mixes that have salt in them, you don’t need to add salt at the stage of making the granola bar, but if you use something that has no flavor at all, it is also delicious with a little bit of sea salt.


If you add large nuts such as almonds and cashews, it can be challenging for the granola bar to keep its form. I recommend using clashed nuts or seeds such as sesame seeds and chia seeds. 


If you like sweet chocolate, you can just put chocolate on one side of the granola bar or add some chocolate chips in the recipe.


I love adding some cocoa powder or matcha powder to make it even flavorful. Use your creative ideas and make your own!!

Ingredients:


  • Rolled Oats  1cup

  • Coconut oil  2 Tbsp

  • Honey  2 Tbsp

  • Cacao nibs 3 Tbsp

  • Mixed seeds or nuts  ½ cup ( I used organic salad mix from naturSource)


How to:


  1. In a large bowl, combine all ingredients and mix well by hand. (Let the oats absorb the honey and oats)

  2. Prepare the parchment paper in a baking vat or Pylex, and put the mixture in the baking container and spread it while pressing.

  3. Bake for 15-20 min in an oven at 375F.

  4. After baking, wait until it cools and cut into the desired shape. (you can also divide by hand)
